sen-ryo’s Flavours of Autumn – Sanma Fish

It’s time for sen-ryo to again present the seasonal sanma fish! Handpicked and directly delivered from the Tsukiji market, Hokkaido to Hong Kong, to create seasonal luscious sanma dishes that are complemented by seasonal premium sakes that are to fully enhance the flavours of Autumn.

September and October are the best months to enjoy sanma fish with its plump, smooth and glossy body with sweet natural flavours that shine on the palate. 

Sanma fish is a kind of fish with high fish oil content, the best and most traditional dish is the Grilled Sanma with Salt, where the crispy skin and succulent meat is accompanied with grated daikon and lemon juice. 

Grilled Sanma with Salt ($180)
Rubbed with sea salt and seared to a crisp texture, this is the most traditional form of serving the sanma. The method is simple yet requires precision of the chef to flavor and grill each fish to perfection.

You may also enjoy them raw like Sanma Sashimi with Sushi (3 types) – yuzu kosho, crispy flamed and grinded ginger with chopped onions, help brings out the freshness and different textures of the fish.

Seared Spicy Sanma Sashimi is a new dish to the menu, it is immersed in a special sauce and seared to perfections provides guests with intense flavours and juiciness.

Thinly sliced sanma are seared to perfection. Complemented with spiced oils, dried peppers, onions and lemon, this combination not only brings out the freshness but also the intense flavours.


In celebration of autumn sanma fish, sen-ryo presents two exclusive seasonal autumn sakes – Hatsumago Akiagari Junmai Ginjyo and Shinkai Autumn Tokubetsu Junmai. When paired together, the sake greatly enhances the distinct flavours of samna while complements impeccably with one another.

This fragrant type sake embodies a blend of honeydew melon aromas. Smooth and silky on entrance, the sake is refreshing with slight hint of spiciness. Seasonal for autumn, it can be served hot or cold.  
(RightShinkai Autumn Tokubetsu Junmai
($85/150ml, $160/300ml, $368/720ml)
This rich type sake has a stable rice-like aroma. Full bodied and lush, the sake exudes a subtle honey flavour. Best served cold or in room temperature.


In addition to the sanma fish, sen-ryo is introducing the 7” Jumbo Red Shrimp Sashimi, pink in color and sweet to the taste, this super shrimp brings a mixture of texture and crispness that cannot be missed.
